Vegan gummy bears
What are gummy bears mostly made of?
For the production of commercially available gummy bears, a ground mass of sugar or sweeteners, water and gelling agent is required. Flavours, vitamins and minerals, acid and colorants are added to the basic mass according to taste.
How are gummy bears produced?
Individual components of the ground mass are weighed in a controlled manner and fed into the cooking system where they are thickened under vacuum. Depending on the recipe, various thickening agents - this can be a vegan base, beef gelatin, gum arabic or pectin - are added. Fruit juice concentrates, natural colorants or herbal concentrates are then gently added to the resulting mass for the taste. Phytopharmaceutical or active pharmaceutical ingredients are added precisely and computer controlled. From the finished mixture, pastilles, gummy bears or jellies are poured into a wide variety of shapes. For example, smiley faces, hearts, crescent moons, turtles or crocodiles are created. Finally, the cast figures are stored in special climate-controlled rooms until further processing.
What are vegan gummy bears without gelatine made of?
The rapidly growing trend of a vegan diet has challenged researchers and developers in the food industry to find plant-based alternatives for the production of various vegan foods and snacks, including gummy bears. The basic vegan mass consists of either starch combinations or pectin. The perfect bite is achieved by the combinations of different starches of vegetable origin, which has similarity with the well-known gelatin bite. This vegan base mass is ideal for the production of various multivitamin, mineral or other vegan food supplements in the form of gummy bears. Complete with the desired active ingredients and natural flavors, molded into a wide variety of shapes, the base compound becomes a gummy with optimized bite and minimal stickiness. Since starch remains dimensionally stable even at high temperatures, this base mass is also recommended for warmer climates.
